La Maison Bordier is the last company to work its churn butter by hand in a mixer and salt it the old-fashioned way, on the fly!
La Maison Bordier is the last company to work its churned butter by hand in a mixer and to salt it the old-fashioned way, on the fly!
During kneading and salting, the butter loses water - it's said to “weep” - giving it not only gustatory qualities and complex aromas, but also a silky texture. The butter is then shaped by hand, tapped with paddles to form lumps, slabs, or even “made-to-measure” mini-butters for top chefs who choose the rate of salting, the recipe, the shape and the weight.
Maison Bordier also offers a selection of French and European cheeses, matured in our 7 cellars. Cheeses are turned, rubbed, washed and tapped, so you can enjoy them at the peak of their flavor. You can also find Bordier butter at the finest creameries throughout France.
In our La Maison du Beurre boutique, you'll find a discovery area on the history of butter in the history of mankind, and an exhibition on the tools and objects used in the 19th century.
Jean-Yves Bordier became an artisan butter-maker in Saint-Malo in 1985, when he took over the La Maison du Beurre crèmerie founded in 1927. He rediscovered the art of kneading and tapping butter, perpetuating the traditional methods and essential gestures of the old butter-makers, which today ensure the quality of his butter.
What's more, in each of our boutiques, you can watch the tapping of semi-salted butter from a lump!
